According to the official docs on Assassin’s Creed Valhalla:

Xbox One X uses a dynamic resolution with the highest native resolution found being 3840 x 2160 and the lowest native resolution found being approximately 2432×1368. Native resolution pixel counts near 3093×1740 seem to be common on Xbox One X. Xbox One X seems to render a native resolution of 3840×2160 rarely.

Xbox One X has some enhancements over the other consoles, such as; improved LOD transition distance, a longer draw distance, and improved texture quality in some scenes.

Meanwhile, on PlayStation 4 Pro, Assassin’s Creed Valhalla dynamic resolution ranges from—2560 x 1400 to 1824 x 1026.
More official docs:

Native resolution pixel counts near 2304×1296 seem to be expected on PS4 Pro. PS4 Pro down-samples from this resolution when outputting at 1080p with forced super-sampling disabled.

On the other hand, Xbox One S and PlayStation 4 are much lower, with Assassin’s Creed Valhalla highest native resolution on Xbox One S at 1600 x 900.

Again, more official docs:

PS4 uses a dynamic resolution with the highest native resolution found being 1920 x 1080, and the lowest native resolution found being approximately 1493 x 840. Native resolution pixel counts near 1728 x 972 seem to be expected on PS4.

Xbox One S uses a dynamic resolution with the highest native resolution found being 1600 x 900, and the lowest native resolution found being approximately 1194 x 672. Native resolution pixel counts near 1344 x 756 seem to be expected on Xbox One S.

Still, having stated all the facts Assassins Creed Valhalla employs a form of structure on all current-gen consoles that enable the game to hit their topmost possible resolution when it renders below it.
